My dear daughter and I did a little mother-daughter baking this afternoon. Kolachky pastries are a family favorite. We all have our favorite fillings. Bill likes cream cheese. I like blueberry and the farm kids, Almanzo and Eliza Jane, (anyone read Farmer Boy lately?), both prefer strawberry.
They are super easy and make for a pretty healthy sweet snack. If you use 100% fruit preserves as your filling, the pastries have no added sugar.
I hope you enjoy this picture tutorial and recipe.
Cream the butter and cream cheese with vanilla until fluffy. Blend flour and salt; add to creamed mixture.
Chill dough for at least an hour. Roll out dough to ¼ inch thickness.
